Ingredients

  • 2 large sweet potatoes
  • 23 tbsp olive oil
  • Salt & black pepper
  • ½ tsp smoked paprika (optional)
  • ½ tsp garlic powder
  • ½ cup crumbled feta cheese
  • ½ cup toasted walnuts (roughly chopped)
  • 12 tbsp chopped fresh parsley
  • 3 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped parsley or thyme
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes into thick rounds or lengthwise halves.
  3. Coat with olive oil, salt, pepper, garlic powder, and paprika.
  4. Place on a baking tray, cut side up.
  5. Roast for 35–40 minutes, flipping halfway.
  6. They should be caramelized, golden, and fork-tender.
  7. In a small bowl, mix honey, olive oil, lemon juice, chopped herbs, and a pinch of salt.
  8. Warm slightly (microwave 10 seconds) to loosen the honey.
  9. Place the roasted sweet potatoes on a serving plate.
  10. Sprinkle generously with crumbled feta and walnuts.
  11. Drizzle with herb honey.
  12. Finish with fresh chopped parsley.

  • For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes.
