- 2 large sweet potatoes
- 2–3 tbsp olive oil
- Salt & black pepper
- ½ tsp smoked paprika (optional)
- ½ tsp garlic powder
- ½ cup crumbled feta cheese
- ½ cup toasted walnuts (roughly chopped)
- 1–2 tbsp chopped fresh parsley
- 3 tbsp honey
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp finely chopped parsley or thyme
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C).
- Slice sweet potatoes into thick rounds or lengthwise halves.
- Coat with olive oil, salt, pepper, garlic powder, and paprika.
- Place on a baking tray, cut side up.
- Roast for 35–40 minutes, flipping halfway.
- They should be caramelized, golden, and fork-tender.
- In a small bowl, mix honey, olive oil, lemon juice, chopped herbs, and a pinch of salt.
- Warm slightly (microwave 10 seconds) to loosen the honey.
- Place the roasted sweet potatoes on a serving plate.
- Sprinkle generously with crumbled feta and walnuts.
- Drizzle with herb honey.
- Finish with fresh chopped parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes.
- Ensure walnuts are toasted for enhanced flavor.
- Can substitute feta with goat cheese for a different taste.
