Description
Delicious steamed muffins made with molasses and raisins, perfect for a warm treat.
Ingredients

- 1 cup molasses
- 1/2 cup brown sugar
- 1 cup boiling water
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup raisins
Instructions
- Prepare a steamer or large pot with a steaming rack and enough water to steam for 25–30 minutes. Bring it to a boil.
- In a mixing bowl, combine molasses and brown sugar. Slowly pour in boiling water, stirring to dissolve the sugar. Let cool slightly.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually mix dry ingredients into the wet mixture until just combined. Do not overmix.
- Fold in the raisins gently to distribute them evenly.
- Grease small silicone or metal muffin molds and fill each about 3/4 full.
- Place molds in the steamer. Cover and steam for 25–30 minutes without lifting the lid.
- Remove from steamer and cool for 10 minutes before removing from molds. Enjoy warm or at room temperature.
Notes
- Store any leftovers in an airtight container.
- You can substitute other dried fruits for the raisins if desired.
