Description

Delicious steamed muffins made with molasses and raisins, perfect for a warm treat.


Ingredients

Scale
  • 1 cup molasses
  • 1/2 cup brown sugar
  • 1 cup boiling water
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup raisins

Instructions

  1. Prepare a steamer or large pot with a steaming rack and enough water to steam for 25–30 minutes. Bring it to a boil.
  2. In a mixing bowl, combine molasses and brown sugar. Slowly pour in boiling water, stirring to dissolve the sugar. Let cool slightly.
  3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Fold in the raisins gently to distribute them evenly.
  6. Grease small silicone or metal muffin molds and fill each about 3/4 full.
  7. Place molds in the steamer. Cover and steam for 25–30 minutes without lifting the lid.
  8. Remove from steamer and cool for 10 minutes before removing from molds. Enjoy warm or at room temperature.

Notes

  • Store any leftovers in an airtight container.
  • You can substitute other dried fruits for the raisins if desired.
