  • 250 g powdered sugar (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • 1 tbsp milk or heavy cream (for buttercream)
  • Pinch of salt (for buttercream)
  • White sanding sugar (for the beard + hat trim)
  • Red mini domes (strawberry gummies, marshmallow domes, or molded white chocolate dyed red)
  • Small white fondant balls (hat pom-pom)
  • White fondant or buttercream (beard)
  • Black sugar pearls or melted chocolate (eyes)
  • Small orange fondant ball (nose)

Instructions

  1. Prepare the Macaron Batter: Sift together almond flour and powdered sugar. Discard large almond pieces.
  2. Make the French Meringue: Beat egg whites until foamy, add granulated sugar gradually, and beat until stiff peaks form. Add vanilla and red gel food color.
  3. Macaronage: Fold dry ingredients into the meringue until the batter flows like lava.
  4. Pipe & Bake: Pipe small round macarons, rest for 30–45 minutes, then bake at 150°C (300°F) for 14–16 minutes. Let cool completely.
  5. Prepare the Buttercream: Beat butter until fluffy, add powdered sugar gradually, then mix in vanilla, milk, and salt until creamy.
  6. Assemble the Santa Faces: Fill macarons with buttercream, add Santa face pieces, pipe the beard, and add details like eyes and nose. Top with a red dome candy and white pom-pom.
  7. Let Them Mature: Store in an airtight box and refrigerate for 24 hours before serving.
