- 1 cup quinoa, rinsed
- 1 cup diced bell peppers (red and green)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp taco seasoning (store-bought or homemade)
- 2 cups low-sodium vegetable broth
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté the onion and bell peppers until soft, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in ground turkey, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.
- Mix in rinsed quinoa, taco seasoning, and vegetable broth. Bring to a gentle boil before reducing heat.
- Cover and simmer on low for about 15 minutes or until quinoa is cooked and liquid is absorbed. Stir occasionally.
- Fluff quinoa with a fork and serve hot with optional garnishes like avocado or cheese.
