Description

A delicious and hearty turkey quinoa skillet that combines lean ground turkey with quinoa and vegetables.

Ingredients

Scale
  • 1 lb lean ground turkey
  • 1 cup quinoa, rinsed
  • 1 cup diced bell peppers (red and green)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 2 cups low-sodium vegetable broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the onion and bell peppers until soft, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in ground turkey, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.
  5. Mix in rinsed quinoa, taco seasoning, and vegetable broth. Bring to a gentle boil before reducing heat.
  6. Cover and simmer on low for about 15 minutes or until quinoa is cooked and liquid is absorbed. Stir occasionally.
  7. Fluff quinoa with a fork and serve hot with optional garnishes like avocado or cheese.
