Description
Shepherd’s Pie Cupcakes are a fun and unique twist on the classic dish, combining savory meat and creamy mashed potatoes in a cupcake form.
Ingredients
Scale
- 1 lb (450 g) ground beef or turkey
- ⅓ cup breadcrumbs
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 large egg
- 2 tbsp ketchup or tomato paste
- 1 tsp Worcestershire sauce
- Salt & pepper, to taste
- 2 cups prepared mashed potatoes (from scratch or instant)
- ½ cup shredded cheddar cheese
- Chopped parsley or diced bell peppers (optional garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a bowl, combine ground beef/turkey, breadcrumbs, garlic powder, onion powder, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
- Divide the meat mixture evenly into the muffin tin, pressing lightly to form cupcake shapes.
- Bake for 18–20 minutes, until meat is cooked through and juices run clear. Remove from oven and drain excess grease if needed.
- Sprinkle shredded cheddar cheese on top of each meat cupcake. Return to oven for 2–3 minutes until cheese melts.
- Pipe or spoon mashed potatoes on top of each cupcake to resemble frosting.
- Sprinkle with parsley, bell pepper bits, or extra cheese. Serve warm.
Notes
- Feel free to use ground chicken or lamb instead of beef or turkey.
- For a vegetarian option, substitute the meat with lentils or a meat alternative.
- These cupcakes can be made ahead of time and reheated before serving.
