Description

Delicious Shrimp & Spinach Stuffed Pasta Rolls that are sure to impress your taste buds with a creamy filling and savory shrimp topping.


Ingredients

  • 2 cups fresh spinach (cooked, drained, and chopped)
  • 1 cup ricotta cheese
  • ½ cup grated parmesan cheese
  • 1 cup mozzarella cheese, shredded
  • 1 garlic clove, minced
  • ½ tsp nutmeg (optional)
  • Salt & black pepper, to taste
  • 810 lasagna sheets (or cannelloni shells)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (warm)
  • ½ cup parmesan cheese
  • Pinch of chili flakes
  • Salt & pepper, to taste
  • 1012 large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil lasagna sheets (or use pre-cooked cannelloni) until al dente. Drain and drizzle lightly with olive oil to prevent sticking.
  2. In a bowl, combine spinach, ricotta, mozzarella, parmesan, garlic, nutmeg, salt, and pepper. Mix until creamy and well combined.
  3. In a saucepan, melt butter, whisk in flour, and cook for 1 minute. Gradually add warm milk, whisking constantly until smooth and thickened. Stir in parmesan, chili flakes, salt, and pepper. Keep warm.
  4. Place a spoonful of spinach-ricotta filling on each pasta sheet, roll tightly, and arrange in a baking dish. Pour the sauce over the rolls.
  5. Heat olive oil in a skillet, season shrimp with paprika, garlic powder, salt, and pepper. Sear shrimp for 2–3 minutes per side until pink and cooked through.
  6. Top pasta rolls with cooked shrimp. Garnish with fresh parsley and extra parmesan if desired.

Notes

  • Feel free to add more spices to the shrimp for extra flavor.
  • Can substitute shrimp with chicken or keep it vegetarian by omitting the shrimp.
  • Make sure to drain the spinach well to avoid excess moisture in the filling.
