Description

A deliciously indulgent Smoked Brisket Grilled Cheese sandwich featuring layers of smoked brisket, caramelized onions, and melted cheese, all grilled to perfection.


Ingredients

  • 4 slices Texas toast or thick sourdough bread
  • 68 oz cooked sliced brisket (smoked if possible)
  • 1 cup caramelized onions
  • 2 slices sharp cheddar cheese
  • 2 slices provolone or mozzarella cheese
  • 2 tbsp butter (softened)
  • Optional: BBQ sauce for dipping

Instructions

  1. Spread butter evenly on one side of each bread slice. These will be the outsides that crisp up in the pan.
  2. On the unbuttered side of one slice, layer a slice of cheddar cheese, half the brisket, half the caramelized onions, and a slice of provolone. Top with another bread slice (butter side out). Repeat for the second sandwich.
  3. Heat a skillet or griddle over medium heat. Place sandwiches in the pan and cook 3–4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
  4. Remove from skillet, slice in half, and serve hot. Optionally pair with BBQ sauce or tomato soup for dipping.

Notes

  • For best results, use freshly smoked brisket.
  • Caramelized onions can be made ahead of time and stored in the refrigerator.
