Description
A deliciously indulgent Smoked Brisket Grilled Cheese sandwich featuring layers of smoked brisket, caramelized onions, and melted cheese, all grilled to perfection.
Ingredients

- 4 slices Texas toast or thick sourdough bread
- 6–8 oz cooked sliced brisket (smoked if possible)
- 1 cup caramelized onions
- 2 slices sharp cheddar cheese
- 2 slices provolone or mozzarella cheese
- 2 tbsp butter (softened)
- Optional: BBQ sauce for dipping
Instructions
- Spread butter evenly on one side of each bread slice. These will be the outsides that crisp up in the pan.
- On the unbuttered side of one slice, layer a slice of cheddar cheese, half the brisket, half the caramelized onions, and a slice of provolone. Top with another bread slice (butter side out). Repeat for the second sandwich.
- Heat a skillet or griddle over medium heat. Place sandwiches in the pan and cook 3–4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
- Remove from skillet, slice in half, and serve hot. Optionally pair with BBQ sauce or tomato soup for dipping.
Notes
- For best results, use freshly smoked brisket.
- Caramelized onions can be made ahead of time and stored in the refrigerator.
- Feel free to experiment with different types of cheese.
