Delicious Smoky BBQ Bacon Stuffed Meatloaf Rolls filled with cheese and wrapped in crispy bacon.

- 1 lb (450 g) ground beef (or half beef, half pork)
- ½ cup breadcrumbs
- 1 egg
- 1 small onion, finely minced
- 2 garlic cloves, minced
- 2 tbsp milk
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 4 oz (115 g) cheddar cheese, cut into small cubes
- 4 oz (115 g) mozzarella cheese, cut into small cubes
- 8 slices of bacon
- ½ cup BBQ sauce (smoky style)
- Fresh parsley or chives, for garnish
Instructions
- In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, smoked paprika, salt, and pepper until just combined (don’t overmix).
- Take about ½ cup of the meat mixture in your hand, flatten it into a disc.
- Place a cube of cheddar and mozzarella in the center, then shape the meat around the cheese to form a ball or roll.
- Wrap each roll with a slice of bacon, securing the ends underneath.
- Brush each roll with BBQ sauce.
- Place on a parchment-lined baking sheet.
- Bake at 375°F (190°C) for 25–30 minutes, until bacon is crisp and internal temp reaches 160°F (71°C).
- Brush with extra BBQ sauce in the last 5 minutes of baking.
- Garnish with fresh parsley or chives.
Notes
- Ensure not to overmix the meat mixture for a tender texture.
- Feel free to use different types of cheese based on your preference.
- Adjust the amount of BBQ sauce according to taste.
