Description

Delicious Smoky BBQ Bacon Stuffed Meatloaf Rolls filled with cheese and wrapped in crispy bacon.


Ingredients

Scale
  • 1 lb (450 g) ground beef (or half beef, half pork)
  • ½ cup breadcrumbs
  • 1 egg
  • 1 small onion, finely minced
  • 2 garlic cloves, minced
  • 2 tbsp milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 oz (115 g) cheddar cheese, cut into small cubes
  • 4 oz (115 g) mozzarella cheese, cut into small cubes
  • 8 slices of bacon
  • ½ cup BBQ sauce (smoky style)
  • Fresh parsley or chives, for garnish

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, smoked paprika, salt, and pepper until just combined (don’t overmix).
  2. Take about ½ cup of the meat mixture in your hand, flatten it into a disc.
  3. Place a cube of cheddar and mozzarella in the center, then shape the meat around the cheese to form a ball or roll.
  4. Wrap each roll with a slice of bacon, securing the ends underneath.
  5. Brush each roll with BBQ sauce.
  6. Place on a parchment-lined baking sheet.
  7. Bake at 375°F (190°C) for 25–30 minutes, until bacon is crisp and internal temp reaches 160°F (71°C).
  8. Brush with extra BBQ sauce in the last 5 minutes of baking.
  9. Garnish with fresh parsley or chives.

  • Ensure not to overmix the meat mixture for a tender texture.
  • Feel free to use different types of cheese based on your preference.
