A delicious and easy-to-make S’mores Explosion Cookie Dough Ice Cream Roll that combines edible cookie dough, marshmallow fluff, and vanilla ice cream, topped with hot fudge and mini marshmallows.

- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 tsp vanilla extract
- 2 cups all-purpose flour (heat treat: microwave 1 min or bake 5 min at 180°C / 350°F)
- ½ tsp salt
- ¼ cup milk (just enough for soft dough texture)
- 1 ½ cups chocolate chips
- ¾ cup crushed graham crackers
- 1 ½ cups marshmallow fluff
- 1 ½ cups vanilla ice cream (slightly softened) OR whipped cream for a less frozen version
- 1 cup mini chocolate chips
- ¾ cup hot fudge sauce, warmed
- 1 cup mini marshmallows
- Additional chocolate chips
- Extra graham cracker crumbs
Instructions
- Make the Edible Cookie Dough: Heat-treat your flour so it’s safe to eat. In a large bowl, beat butter + sugars until creamy. Add vanilla + salt. Slowly mix in flour. Add milk until soft cookie dough consistency. Fold in chocolate chips + crushed graham crackers.
- Shape the Roll Base: Lay a large sheet of parchment paper or plastic wrap on the counter. Spread all cookie dough into a large rectangle, about ½–¾ inch thick. Place into the fridge 15 minutes to firm slightly.
- Add the Filling: Spread a thick layer of marshmallow fluff over the cookie dough. Spread or swirl softened vanilla ice cream (or whipped cream) over the marshmallow. Sprinkle mini chocolate chips generously.
- Roll It Up: Use the parchment to lift and roll the dough tightly into a log. Wrap well and freeze 2–3 hours (for clean slices) or chill 1 hour for a softer, gooier version.
- Decorate: Unwrap and place on serving platter. Warm hot fudge and drizzle heavily over the top. Add mini marshmallows + chocolate chips. Sprinkle graham crumbs around and on top.
