Description

A delicious and easy-to-make S’mores Explosion Cookie Dough Ice Cream Roll that combines edible cookie dough, marshmallow fluff, and vanilla ice cream, topped with hot fudge and mini marshmallows.

  • ¼ cup milk (just enough for soft dough texture)
  • 1 ½ cups chocolate chips
  • ¾ cup crushed graham crackers
  • 1 ½ cups marshmallow fluff
  • 1 ½ cups vanilla ice cream (slightly softened) OR whipped cream for a less frozen version
  • 1 cup mini chocolate chips
  • ¾ cup hot fudge sauce, warmed
  • 1 cup mini marshmallows
  • Additional chocolate chips
  • Extra graham cracker crumbs

Instructions

  1. Make the Edible Cookie Dough: Heat-treat your flour so it’s safe to eat. In a large bowl, beat butter + sugars until creamy. Add vanilla + salt. Slowly mix in flour. Add milk until soft cookie dough consistency. Fold in chocolate chips + crushed graham crackers.
  2. Shape the Roll Base: Lay a large sheet of parchment paper or plastic wrap on the counter. Spread all cookie dough into a large rectangle, about ½–¾ inch thick. Place into the fridge 15 minutes to firm slightly.
  3. Add the Filling: Spread a thick layer of marshmallow fluff over the cookie dough. Spread or swirl softened vanilla ice cream (or whipped cream) over the marshmallow. Sprinkle mini chocolate chips generously.
  4. Roll It Up: Use the parchment to lift and roll the dough tightly into a log. Wrap well and freeze 2–3 hours (for clean slices) or chill 1 hour for a softer, gooier version.
  5. Decorate: Unwrap and place on serving platter. Warm hot fudge and drizzle heavily over the top. Add mini marshmallows + chocolate chips. Sprinkle graham crumbs around and on top.
