  • 6 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Chopped cilantro for garnish
  • Shredded lettuce for serving
  • Diced tomatoes and onions for serving
  • Sour cream or guacamole for serving

Instructions

  1. Make the Beef Filling: In a skillet over medium heat, cook ground beef and onion until browned (about 7 minutes). Add garlic and cook 30 seconds more. Stir in taco seasoning and water; simmer until slightly thickened. Mix in refried beans (if using) and cook 2 minutes more. Set aside.
  2. Prepare the Smother Sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until golden. Slowly pour in beef broth, whisking constantly. Add tomato sauce, chili powder, cumin, and salt. Simmer for 3–5 minutes until smooth and slightly thickened.
  3. Assemble the Burritos: Preheat oven to 400°F (200°C). Lay out the tortillas and spoon beef mixture into the center of each. Sprinkle with cheese, then roll tightly, tucking in the ends. Place burritos seam-side down in a baking dish. Pour the smother sauce over the top and cover with the remaining cheese.
