  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp heavy cream (adjust for spreadable consistency)
  • Sweetened shredded coconut (for decoration)
  • Pecan halves (for garnish)
  • White chocolate shavings (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add egg whites one at a time, beating well. Stir in vanilla and almond extracts.
  5. Alternate adding dry mixture and buttermilk, mixing gently until smooth.
  6. Fold in shredded coconut and chopped pecans.
  7. Divide batter evenly among pans and bake 25–30 minutes, or until a toothpick inserted comes out clean.
  8. Cool completely before frosting.
  9. Beat cream cheese and butter until smooth and creamy.
  10. Add powdered sugar gradually, mixing until fluffy.
  11. Beat in vanilla and enough cream to reach a spreadable consistency.
  12. Place first cake layer on a serving plate and spread with frosting.
  13. Repeat with second and third layers. Frost the top and sides of the cake.
  14. Press shredded coconut onto the sides for a snowy finish.
  15. Pipe swirls of frosting along the top edge.
  16. Garnish with pecan halves and sprinkle with more coconut or white chocolate shavings.
