- 1 cup buttermilk (room temp)
- ½ cup shredded sweetened coconut
- 1 cup finely chopped pecans (or walnuts)
- 8 oz cream cheese (softened)
- ½ cup unsalted butter (softened)
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp heavy cream (adjust for spreadable consistency)
- Sweetened shredded coconut (for decoration)
- Pecan halves (for garnish)
- White chocolate shavings (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add egg whites one at a time, beating well. Stir in vanilla and almond extracts.
- Alternate adding dry mixture and buttermilk, mixing gently until smooth.
- Fold in shredded coconut and chopped pecans.
- Divide batter evenly among pans and bake 25–30 minutes, or until a toothpick inserted comes out clean.
- Cool completely before frosting.
- Beat cream cheese and butter until smooth and creamy.
- Add powdered sugar gradually, mixing until fluffy.
- Beat in vanilla and enough cream to reach a spreadable consistency.
- Place first cake layer on a serving plate and spread with frosting.
- Repeat with second and third layers. Frost the top and sides of the cake.
- Press shredded coconut onto the sides for a snowy finish.
- Pipe swirls of frosting along the top edge.
- Garnish with pecan halves and sprinkle with more coconut or white chocolate shavings.

- Adjust the amount of heavy cream in the frosting for desired consistency.
