  • 1 cup fresh baby spinach
  • 1/2 cup shredded cheddar or feta cheese
  • 2 tablespoons milk or cream

  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons fresh herbs like chives or parsley

Instructions

  1. Prepare the Ingredients: Start by washing the spinach thoroughly. If using fresh spinach, chop it roughly. If using frozen, ensure it’s completely thawed and squeezed dry.
  2. Whisk the Eggs: In a bowl, crack the eggs and add a splash of milk or cream. Season with salt and pepper. Whisk until well combined and frothy.
  3. Cook the Spinach: Heat a non-stick skillet over medium heat and add a little oil or butter. Once hot, add the spinach and sauté for about 1-2 minutes until wilted. Remove from the skillet and set aside.
  4. Make the Omelette Base: In the same skillet, pour in the whisked eggs. Allow them to cook undisturbed for about 1-2 minutes, until the edges start to set.
  5. Add Spinach and Cheese: Once the eggs are mostly set, spread the sautéed spinach evenly over one half of the omelette. Sprinkle your choice of cheese on top of the spinach.
  6. Fold and Finish Cooking: Carefully fold the omelette in half, covering the spinach and cheese. Let it cook for another minute or so until the cheese starts to melt and the eggs are fully cooked.
  7. Serve: Gently slide the omelette onto a plate and serve hot. You can garnish it with additional herbs or a sprinkle of cheese if desired.
