A delicious and easy-to-make Spinach & Feta Crustless Quiche, perfect for any meal.
Ingredients

- 6 large eggs
- 200 ml milk (or half milk half cream for creaminess)
- 150 g fresh spinach (or well-drained frozen spinach)
- 100 g crumbled feta cheese
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 50 g diced ham (optional)
- 50 g grated cheese (Gruyère, mozzarella, or cheddar)
- Salt, pepper, nutmeg to taste
- 1 tablespoon olive oil
Instructions
- Prepare the vegetables: In a pan, heat the olive oil and sauté the onion and garlic. Add the spinach until wilted and the water has evaporated. Let cool slightly.
- Mix the batter: In a large bowl, whisk the eggs with the milk. Season with salt, pepper, and a pinch of nutmeg. Add the cooked spinach, ham (if using), grated cheese, and half of the feta.
- Cooking: Preheat the oven to 180°C (350°F). Pour the mixture into a greased (or lined with parchment paper) baking dish. Sprinkle the remaining feta on top. Bake for 35 to 40 minutes, until the quiche is golden and set in the center.
- Serving: Let cool for 10 minutes before slicing. Serve with a small green salad or fresh tomato salad.
Notes
- For a vegetarian option, omit the ham.
- This quiche can be served warm or at room temperature.
- Store leftovers in the refrigerator for up to 3 days.
