Ingredients

  • 6 large eggs
  • 200 ml milk (or half milk half cream for creaminess)
  • 150 g fresh spinach (or well-drained frozen spinach)
  • 100 g crumbled feta cheese
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 50 g diced ham (optional)
  • 50 g grated cheese (Gruyère, mozzarella, or cheddar)
  • Salt, pepper, nutmeg to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the vegetables: In a pan, heat the olive oil and sauté the onion and garlic. Add the spinach until wilted and the water has evaporated. Let cool slightly.
  2. Mix the batter: In a large bowl, whisk the eggs with the milk. Season with salt, pepper, and a pinch of nutmeg. Add the cooked spinach, ham (if using), grated cheese, and half of the feta.
  3. Cooking: Preheat the oven to 180°C (350°F). Pour the mixture into a greased (or lined with parchment paper) baking dish. Sprinkle the remaining feta on top. Bake for 35 to 40 minutes, until the quiche is golden and set in the center.
  4. Serving: Let cool for 10 minutes before slicing. Serve with a small green salad or fresh tomato salad.

Notes

  • For a vegetarian option, omit the ham.
  • This quiche can be served warm or at room temperature.
