Description
A delicious and quick shrimp noodle bowl with a spicy kick from Sriracha, packed with fresh vegetables.

- 1 pound large, peeled, and deveined shrimp
- 8 ounces rice noodles (or any type of noodles such as soba or udon)
- 2 tablespoons Sriracha
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
- 1 cup vegetable broth (or chicken broth)
- 1/4 cup fresh cilantro, chopped
- 2 green onions, chopped
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon oil
Instructions
- Prepare the Noodles: Begin by cooking your noodles according to the package instructions. Drain and rinse them under cold water to prevent sticking, then set aside.
- Sauté the Vegetables: In a large skillet or wok, heat a tablespoon of oil over medium heat. Add sliced bell peppers, carrots, and snap peas. Sauté for about 3-4 minutes until they are tender yet crisp.
- Cook the Shrimp: Push the vegetables to one side of the skillet and add the shrimp. Cook for about 2-3 minutes on each side until they turn pink and opaque. Make sure not to overcook them.
- Add the Sauce: In a small bowl, mix together soy sauce, Sriracha, and a splash of broth. Pour this mixture over the shrimp and vegetables. Stir to coat everything evenly.
- Combine with Noodles: Add the cooked noodles to the skillet. Toss everything together gently, ensuring the noodles are well coated with the sauce and mixed with the shrimp and veggies. Heat through for another minute.
- Garnish: Remove the skillet from heat. Serve the noodle bowl in individual bowls, garnishing with freshly chopped cilantro and green onions. A squeeze of lime juice adds a lovely touch!
Notes
- This recipe can be adjusted for spice by adding more or less Sriracha.
- Feel free to substitute vegetables based on your preference or seasonal availability.
