Ingredients

  • 2 cups graham cracker crumbs (or digestive biscuits, finely crushed)
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz (450 g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 cups fresh strawberries, chopped (or frozen, thawed)
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press mixture firmly into the bottom of a greased or parchment-lined 9×13-inch baking dish.
  4. Bake for 8–10 minutes. Remove and let cool slightly.
  5. In a large mixing bowl, beat cream cheese and sugar until smooth.
  6. Add eggs one at a time, mixing until just combined.
  7. Stir in vanilla and sour cream until smooth.
  8. Pour filling over the cooled crust and spread evenly.
  9. Bake for 30–35 minutes, until the edges are set but the center is slightly jiggly.
  10. Let cool completely at room temperature, then refrigerate for at least 3 hours (or overnight).
  11. In a saucepan, combine chopped strawberries, sugar, and lemon juice.
  12. Cook over medium heat until strawberries release juices.
  13. Stir in cornstarch slurry and cook until thickened (2–3 minutes).
  14. Allow to cool before spreading over chilled cheesecake.
  15. Spread strawberry topping evenly over cheesecake.
  16. Chill for 1 hour before slicing into brownie-like bars.

Notes

  • For a gluten-free option, use gluten-free graham crackers.
  • Can substitute fresh strawberries with other berries if desired.
