Instructions

  1. Take cookies and carefully cut them in half.
  2. In a bowl, mix graham cracker crumbs, melted butter, and gelatin powder (if using).
  3. Lightly coat cookie halves with this crumb mixture to form a crunchy, sweet “boat” shell.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. In another bowl, whip cold heavy cream until stiff peaks form.
  6. Fold whipped cream into the cream cheese mixture to create a fluffy filling.
  7. Pipe or spoon the cream filling inside each cookie shell.
  8. Add a spoonful of strawberry pie filling or compote on top.
  9. Garnish with half a fresh strawberry.
  10. Refrigerate for at least 30 minutes before serving so they hold shape.
