- 12 Lotus Biscoff biscuits
- 200 ml heavy cream (chilled)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 8–10 fresh strawberries (sliced)
- Optional: a drizzle of melted Biscoff spread or chocolate
Instructions
- In a cold mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Transfer into a piping bag for neat filling (star or round nozzle works best).
- Wash, hull, and slice the strawberries into thin, even pieces.
- Place 6 Lotus biscuits flat side up on a tray or plate.
- Pipe swirls or dollops of whipped cream evenly across each biscuit.
- Layer with strawberry slices on top of the cream.
- Gently press another Lotus biscuit on top to form a sandwich.
- Chill for 10–15 minutes before serving to let the cream set slightly.
- Dust lightly with powdered sugar, drizzle with melted Biscoff spread, or decorate with a small edible flower for an elegant touch.
