Ingredients

  • 12 Lotus Biscoff biscuits
  • 200 ml heavy cream (chilled)
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 810 fresh strawberries (sliced)
  • Optional: a drizzle of melted Biscoff spread or chocolate

Instructions

  1. In a cold mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Transfer into a piping bag for neat filling (star or round nozzle works best).
  3. Wash, hull, and slice the strawberries into thin, even pieces.
  4. Place 6 Lotus biscuits flat side up on a tray or plate.
  5. Pipe swirls or dollops of whipped cream evenly across each biscuit.
  6. Layer with strawberry slices on top of the cream.
  7. Gently press another Lotus biscuit on top to form a sandwich.
  8. Chill for 10–15 minutes before serving to let the cream set slightly.
  9. Dust lightly with powdered sugar, drizzle with melted Biscoff spread, or decorate with a small edible flower for an elegant touch.
