Ingredients

  • 1 box vanilla or white cake mix (plus ingredients listed on box)
  • 1 cup crushed golden Oreos or graham crackers (for the crunchy layer)
  • 1/4 cup butter, melted
  • 2 cups fresh strawberries, hulled and sliced
  • 1 packet (3 oz) strawberry Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup sweetened condensed milk
  • 2 cups heavy whipping cream (or 1 tub Cool Whip)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries (whole and halved)
  • Crumbled cookies or golden Oreos for crunch

Instructions

  1. Prepare cake mix according to package directions in a 9×13 pan. Bake and let cool slightly. Mix crushed cookies with melted butter and press half into the bottom of the serving dish.
  2. Using the handle of a wooden spoon, poke holes all over the cooled cake. Dissolve Jell-O in boiling water, then add cold water and sweetened condensed milk. Pour mixture evenly over cake, making sure it seeps into holes. Layer with sliced strawberries. Chill 1 hour.
  3. Whip cream with powdered sugar and vanilla until stiff peaks form (or use Cool Whip). Spread evenly over cake.
  4. Top with whole fresh strawberries. Sprinkle remaining cookie crumbs around edges. Pipe extra whipped cream for a bakery-style look.

Notes

  • For a lighter version, you can use a sugar-free cake mix and Jell-O.
  • Make sure to chill the cake for at least an hour to allow the flavors to meld.
