Ingredients

  • 4 large eggs, room temperature
  • 200 g (1 cup) granulated sugar
  • 120 ml (½ cup) whole milk, warm
  • 80 g (6 tbsp) unsalted butter, melted
  • 1 tsp vanilla extract
  • 500 ml (2 cups) whole milk
  • 100 g (½ cup) sugar
  • 4 large egg yolks
  • 40 g (⅓ cup) cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • 400 g (3 cups) fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 250 g (1 cup) mascarpone or cream cheese
  • 200 ml (¾ cup) heavy cream, chilled
  • 3 tbsp powdered sugar
  • Fresh whole strawberries for garnish

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch round cake pans.
  2. Sift flour, baking powder, and salt together.
  3. In another bowl, beat eggs and sugar until pale and fluffy (about 5 minutes).
  4. Fold in dry ingredients gently.
  5. Stir in warm milk, melted butter, and vanilla until smooth.
  6. Divide into pans and bake for 20–25 minutes. Cool completely.
  7. In a saucepan, heat milk until warm.
  8. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  9. Slowly pour in the warm milk while whisking.
  10. Return mixture to saucepan and cook over medium heat until thickened.
  11. Remove from heat, stir in vanilla and butter.
  12. Cover with plastic wrap directly on the surface and chill.
  13. Toss sliced strawberries with sugar and lemon juice.
  14. Let sit 10–15 minutes until slightly syrupy.
  15. Place first sponge layer on a plate.
  16. Spread custard cream generously.
  17. Add a layer of sliced strawberries.
  18. Top with second sponge and repeat with custard and strawberries if desired.
  19. Whip heavy cream with mascarpone and powdered sugar until fluffy.
  20. Pipe decorative swirls on top.
  21. Garnish with fresh whole strawberries.
