- ½ tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar (plus extra for rolling)
- 1 large egg
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 2 tbsp red or pink strawberry gelatin powder or freeze-dried strawberry powder
- Red food coloring (optional, for brighter swirl)
Instructions
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add egg, lemon juice, zest, and vanilla; mix until combined.
- Gradually add dry ingredients until dough forms.
- Split dough in half.
- For the lemon half: leave plain.
- For the strawberry half: mix in gelatin powder (or strawberry powder) and a drop of red food coloring if desired.
- Take equal portions of lemon dough and strawberry dough.
- Roll together lightly, twisting to form a marbled/swirl effect.
- Roll balls in granulated sugar.
- Preheat oven to 350°F (175°C).
- Place dough balls on parchment-lined baking sheet.
- Bake 10–12 minutes, until edges are set and tops slightly crackly.
- Cool on a wire rack.
Notes
- Chill the dough for 30 minutes for easier handling.
- Adjust the amount of food coloring based on desired brightness.
- Store cookies in an airtight container for up to a week.
