Ingredients

  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2 tbsp red or pink strawberry gelatin powder or freeze-dried strawberry powder
  • Red food coloring (optional, for brighter swirl)

Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, beat butter and sugar until light and fluffy.
  3. Add egg, lemon juice, zest, and vanilla; mix until combined.
  4. Gradually add dry ingredients until dough forms.
  5. Split dough in half.
  6. For the lemon half: leave plain.
  7. For the strawberry half: mix in gelatin powder (or strawberry powder) and a drop of red food coloring if desired.
  8. Take equal portions of lemon dough and strawberry dough.
  9. Roll together lightly, twisting to form a marbled/swirl effect.
  10. Roll balls in granulated sugar.
  11. Preheat oven to 350°F (175°C).
  12. Place dough balls on parchment-lined baking sheet.
  13. Bake 10–12 minutes, until edges are set and tops slightly crackly.
  14. Cool on a wire rack.
