- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup sugar
- ¾ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- ½ cup hot coffee
- 2 cups heavy whipping cream, chilled
- 1 cup cream cheese, softened
- 1 ½ cups powdered sugar
- 1 cup strawberry purée
- 1 teaspoon vanilla extract
- 1 cup whole fresh strawberries
- 8–10 Oreo cookies, halved
- ½ cup Oreo crumbs
- 1 cup whipped cream for piping
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.
- Prepare the cake batter: In a bowl, whisk dry ingredients (flour, cocoa, baking powder, baking soda, salt). In another, whisk sugars, oil, eggs, vanilla, and buttermilk. Combine wet and dry, then stir in hot coffee until smooth.
- Bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
- Prepare the strawberry cream: Beat cream cheese and powdered sugar until smooth. Add strawberry purée and vanilla. In another bowl, whip heavy cream to stiff peaks, then fold into the strawberry mixture.
- Assemble: Slice cakes horizontally into 4 thin layers.
- Place the first layer, spread a thin coat of strawberry cream, sprinkle Oreo crumbs.
- Add the second layer, pipe a ring of cream around the edge, and fill with whole strawberries and more cream.
- Repeat layers and finish with strawberry cream on top.
- Chill the cake for 2–3 hours to set.
- Decorate: Pipe whipped cream swirls and top with Oreo halves and crumbs.
