  • 1 cup strawberry purée
  • 1 teaspoon vanilla extract
  • 1 cup whole fresh strawberries
  • 810 Oreo cookies, halved
  • ½ cup Oreo crumbs
  • 1 cup whipped cream for piping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.
  2. Prepare the cake batter: In a bowl, whisk dry ingredients (flour, cocoa, baking powder, baking soda, salt). In another, whisk sugars, oil, eggs, vanilla, and buttermilk. Combine wet and dry, then stir in hot coffee until smooth.
  3. Bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  4. Prepare the strawberry cream: Beat cream cheese and powdered sugar until smooth. Add strawberry purée and vanilla. In another bowl, whip heavy cream to stiff peaks, then fold into the strawberry mixture.
  5. Assemble: Slice cakes horizontally into 4 thin layers.
  6. Place the first layer, spread a thin coat of strawberry cream, sprinkle Oreo crumbs.
  7. Add the second layer, pipe a ring of cream around the edge, and fill with whole strawberries and more cream.
  8. Repeat layers and finish with strawberry cream on top.
  9. Chill the cake for 2–3 hours to set.
  10. Decorate: Pipe whipped cream swirls and top with Oreo halves and crumbs.
