Description
Delicious and creamy strawberry truffles made with fresh strawberries and white chocolate.
Ingredients

- 1 cup fresh strawberries, hulled and pureed
- 1 ½ cups white chocolate chips (or finely chopped white chocolate)
- 3 tbsp heavy cream
- 1 tbsp unsalted butter
- 1 tsp vanilla extract (optional)
- Pinch of salt
- 1 cup powdered sugar (for rolling)
Instructions
- Blend strawberries into a smooth puree.
- Strain through a fine sieve to remove seeds.
- In a small saucepan, heat the strawberry puree with butter and cream over medium-low heat. Stir gently for 3–4 minutes, until slightly thickened. Do not boil.
- Place white chocolate in a heatproof bowl. Pour hot strawberry mixture over the chocolate. Let sit for 2 minutes. Stir until smooth and creamy. (If needed, microwave in short 10-sec bursts to melt completely.) Mix in vanilla extract and a pinch of salt.
- Cover and refrigerate for 2–3 hours, or until firm enough to scoop.
- Scoop small spoonfuls and roll into balls with clean hands. Roll each ball generously in powdered sugar to coat.
Notes
- Ensure strawberries are fresh for the best flavor.
- Adjust the sweetness by adding more or less powdered sugar when rolling.
- Store truffles in the refrigerator for up to a week.
