Description

Delicious and creamy strawberry truffles made with fresh strawberries and white chocolate.


Ingredients

Scale
  • 1 cup fresh strawberries, hulled and pureed
  • 1 ½ cups white chocolate chips (or finely chopped white chocolate)
  • 3 tbsp heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract (optional)
  • Pinch of salt
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Blend strawberries into a smooth puree.
  2. Strain through a fine sieve to remove seeds.
  3. In a small saucepan, heat the strawberry puree with butter and cream over medium-low heat. Stir gently for 3–4 minutes, until slightly thickened. Do not boil.
  4. Place white chocolate in a heatproof bowl. Pour hot strawberry mixture over the chocolate. Let sit for 2 minutes. Stir until smooth and creamy. (If needed, microwave in short 10-sec bursts to melt completely.) Mix in vanilla extract and a pinch of salt.
  5. Cover and refrigerate for 2–3 hours, or until firm enough to scoop.
  6. Scoop small spoonfuls and roll into balls with clean hands. Roll each ball generously in powdered sugar to coat.

  • Adjust the sweetness by adding more or less powdered sugar when rolling.
