- 3 cups milk
- 3 cups all-purpose flour
- 1 tablespoon kosher salt
- 6 large eggs
- 4 ounces Swiss cheese, grated
- 2 ounces Swiss cheese, grated
- 1–2 tablespoons fresh thyme leaves, finely chopped
- 6 teaspoons butter
Instructions
- Prepare the Pan: Place ½ teaspoon butter into the bottom of each cup of a 12-cup popover pan. Put the pan in the oven so the butter melts while the oven preheats.
- Preheat the Oven: Set the oven to 400°F, placing the popover pan in the lower third of the oven.
- Warm the Milk: Pour the milk into a saucepan and heat over medium-high. Stop heating when you see tiny bubbles forming around the edges. Remove from the heat — do not boil.
- Mix the Dry Ingredients: In a separate bowl, sift together: Flour, Salt. Add the chopped fresh thyme to the flour mixture. Mix well.
- Whisk the Eggs: Beat the eggs in a large bowl until foamy and light.
- Combine Eggs & Warm Milk: Slowly stream the warm milk into the whisked eggs, whisking constantly so the eggs don’t cook.
- Add the Flour Mixture: Whisk the flour–thyme mixture into the egg–milk mixture until smooth and free of lumps.
- Add the Swiss Cheese: Fold in 4 ounces of grated Swiss cheese so it is evenly mixed throughout the batter.
- Fill the Popover Pan: Carefully remove the hot pan from the oven. Fill each cup ¾ full with the batter. Sprinkle a small handful of Swiss cheese (about ½ ounce) over each filled cup.
- Bake: Place a baking sheet on the rack below the popover pan to catch drips. Bake the popovers for 45 minutes WITHOUT opening the oven door — this ensures maximum rise.
- Finish & Serve: Remove the pan from the oven. Cut a small slit in the bottom of each popover to release steam (this keeps them crisp). Serve immediately while hot and puffed. These popovers pair beautifully with soups, roasts, salads, or can be enjoyed on their own with butter.
