A delicious and hearty beef and bean chili that’s perfect for any occasion.
Ingredients

- 1 pound ground beef
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 packet taco seasoning (or 3 tablespoons homemade)
- 2 1/2 cups beef broth
- 1 can (15 ounces) pinto beans (undrained)
- 1 can (15 ounces) black beans (undrained)
- 1 can (15 ounces) kidney beans (undrained)
- 1 can (4 ounces) green chiles (undrained)
- 2 cups frozen corn
- 1 can (14 ounces) diced tomatoes (undrained)
- 1 packet ranch dressing mix
Instructions
- Heat a large pot on medium-high heat add the ground beef and onion and cook until browned about 7-8 minutes.
- Add in the garlic and cook another 30 seconds.
- Add in the chili powder, smoked paprika, salt, pepper, and taco seasoning, and cook another 30 seconds.
- Add in the beans, green chiles, corn, tomatoes and ranch seasoning and give it a stir.
- Pour in the beef broth and mix until combined, and simmer on low for 1 hour with the lid on.
- Serve with all of your favorite toppings!
Notes
- This chili is great served with cornbread or over rice.
- Customize by adding your favorite toppings such as cheese, sour cream, or avocado.
