  • 3 tbsp all-purpose flour
  • 3 cups (720 ml) whole milk, warmed
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper (or more to taste)
  • ½ tsp salt (adjust as needed)
  • ½ tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Shredded cheddar cheese (optional, for topping)
  • 2 fried or scrambled eggs (optional, for a breakfast twist)

Instructions

  1. Preheat oven to 220°C (425°F).
  2. Arrange tater tots on a lined baking sheet, drizzle lightly with oil, and bake for 25–30 minutes, until golden and crispy. (Air fryer option: 200°C / 400°F for 15–20 minutes, shaking halfway.)
  3. In a large skillet over medium heat, cook sausage until browned and crumbled (6–8 minutes).
  4. Remove sausage with a slotted spoon, leaving about 2 tbsp fat in the skillet. Add butter if needed to reach about 3 tbsp fat.
  5. Stir flour into the fat to form a roux. Cook for 1–2 minutes, until lightly golden.
  6. Slowly whisk in warm milk, stirring constantly to avoid lumps.
  7. Add garlic powder, onion powder, salt, pepper, and red pepper flakes.
  8. Simmer 4–5 minutes, until thick and creamy. Stir sausage back into gravy.
  9. Place crispy tater tots in a large serving bowl.
  10. Pour hot sausage gravy generously over the tots.
  11. Garnish with parsley and optional cheddar cheese.
  12. Top with fried or scrambled eggs if making it a breakfast bowl.
