A comforting and easy casserole with ground beef, cheddar cheese, and crispy tater tots.

- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup frozen mixed vegetables (peas and carrots work well)
- 2 cups shredded cheddar cheese
- 1 bag (about 28 to 32 oz) frozen tater tots
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F and lightly grease a baking dish.
- In a large skillet over medium heat, cook the ground beef until browned (break it apart as it cooks). Drain any excess grease.
- Add chopped onion and garlic to the skillet. Cook for 2 to 3 minutes until softened.
- Stir in the cream of mushroom soup and milk. Mix well until creamy (stir slowly so everything blends smoothly).
- Add frozen vegetables, salt, and pepper. Cook for another 2 minutes.
- Spread the beef mixture evenly into the prepared baking dish.
- Sprinkle 1 cup of shredded cheese over the beef layer.
- Arrange the frozen tater tots in a single layer on top.
- Bake for 35 to 40 minutes, or until the tater tots are golden and crispy.
- Sprinkle the remaining cheese on top and bake for another 5 minutes until melted.
- Let it rest for 5 minutes before serving (this helps it set nicely).
Notes
- You can use cream of chicken soup instead of mushroom.
- Ground turkey can replace ground beef for a lighter option.
- Feel free to use fresh vegetables if you prefer.
