Description

A comforting and easy casserole with ground beef, cheddar cheese, and crispy tater tots.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas and carrots work well)
  • 2 cups shredded cheddar cheese
  • 1 bag (about 28 to 32 oz) frozen tater tots
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned (break it apart as it cooks). Drain any excess grease.
  3. Add chopped onion and garlic to the skillet. Cook for 2 to 3 minutes until softened.
  4. Stir in the cream of mushroom soup and milk. Mix well until creamy (stir slowly so everything blends smoothly).
  5. Add frozen vegetables, salt, and pepper. Cook for another 2 minutes.
  6. Spread the beef mixture evenly into the prepared baking dish.
  7. Sprinkle 1 cup of shredded cheese over the beef layer.
  8. Arrange the frozen tater tots in a single layer on top.
  9. Bake for 35 to 40 minutes, or until the tater tots are golden and crispy.
  10. Sprinkle the remaining cheese on top and bake for another 5 minutes until melted.
  11. Let it rest for 5 minutes before serving (this helps it set nicely).

Notes

  • You can use cream of chicken soup instead of mushroom.
  • Ground turkey can replace ground beef for a lighter option.
  • Feel free to use fresh vegetables if you prefer.
