A delicious and easy-to-make Texas Tamale Pie Casserole that combines a savory meat filling with a cornbread topping.
Ingredients

- 1 tbsp oil
- 1 lb ground beef (or turkey)
- 1 small onion, diced
- 2–3 cloves garlic, minced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 (14 oz) can diced tomatoes (with juice)
- 1 (8 oz) can tomato sauce
- 2 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- Salt and pepper to taste
- 1 (8.5 oz) box cornbread mix (plus ingredients listed on box)
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, chopped green onions, diced tomatoes
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet, heat oil over medium heat.
- Add onion and garlic; sauté until fragrant, about 2 minutes.
- Add ground beef, cooking until browned. Drain excess fat.
- Stir in corn, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Simmer 5–7 minutes to blend flavors.
- Prepare cornbread batter according to package instructions.
- Pour batter evenly over the meat mixture in the skillet.
- Bake for 20–25 minutes, until the cornbread is golden and cooked through.
- Sprinkle cheese on top and return to oven for 5 minutes, until melted.
- Top with sour cream, green onions, and diced tomatoes if desired.
- Slice and serve hot.
Notes
- Feel free to substitute ground turkey for a leaner option.
- Adjust the spices according to your taste preference.
- This dish can be made ahead of time and reheated before serving.
