Ingredients

  • 1 small onion, diced
  • 23 cloves garlic, minced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 (14 oz) can diced tomatoes (with juice)
  • 1 (8 oz) can tomato sauce
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 (8.5 oz) box cornbread mix (plus ingredients listed on box)
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, chopped green onions, diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat oil over medium heat.
  3. Add onion and garlic; sauté until fragrant, about 2 minutes.
  4. Add ground beef, cooking until browned. Drain excess fat.
  5. Stir in corn, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Simmer 5–7 minutes to blend flavors.
  6. Prepare cornbread batter according to package instructions.
  7. Pour batter evenly over the meat mixture in the skillet.
  8. Bake for 20–25 minutes, until the cornbread is golden and cooked through.
  9. Sprinkle cheese on top and return to oven for 5 minutes, until melted.
  10. Top with sour cream, green onions, and diced tomatoes if desired.
  11. Slice and serve hot.
