  • ½ cup (115 g) unsalted butter, softened (for filling)
  • 1 cup (200 g) brown sugar
  • 2 tbsp ground cinnamon
  • 4 oz (115 g) cream cheese, softened (for glaze)
  • 2 cups (250 g) powdered sugar
  • 23 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, whisk flour, sugar, yeast, and salt.
  2. Add warm milk, eggs, and melted butter. Mix until dough comes together.
  3. Knead 8–10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled.
  5. Mix softened butter, brown sugar, and cinnamon into a paste.
  6. Roll dough into a rectangle (~16×20 inches).
  7. Spread filling evenly over dough.
  8. Roll tightly into a log and slice into thick rolls (about 2 inches wide).
  9. Arrange rolls in greased round pans (use multiple layers for a tower look).
  10. Cover and let rise 30–45 minutes.
  11. Bake at 350°F (175°C) for 25–30 minutes, until golden brown.
  12. Beat cream cheese until smooth.
  13. Add powdered sugar, milk, and vanilla. Mix until pourable.
  14. Once baked rolls cool slightly, stack them in layers on a cake stand.
  15. Drizzle glaze generously over the top so it drips down the sides.
  16. Serve warm, pulling apart each roll slice by slice!
