- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ teaspoon salt
- ½ cup cold unsalted butter, cubed
- 1 large egg yolk
- 2–3 tablespoons cold water
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy cream, whipped to soft peaks
- 1 cup strawberries, halved
- 1 cup fresh pineapple chunks
- 2 kiwis, peeled and sliced
- ½ cup mango, diced
- 2 tablespoons shredded coconut (optional)
- Fresh mint leaves, for garnish
- ¼ cup apricot preserves (or peach)
- 1 tablespoon water
Instructions
- In a food processor, pulse together flour, powdered sugar, and salt.
- Add cold butter cubes and pulse until mixture looks crumbly.
- Add egg yolk and water gradually until dough just comes together.
- Form into a disc, wrap in plastic wrap, and chill for 30 minutes.
- Preheat oven to 350°F (175°C). Roll dough and press into mini tart pans.
- Poke bottoms with a fork, line with parchment, and fill with pie weights.
- Bake 12–15 minutes, remove weights, and bake another 5 minutes until golden. Let cool.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped cream gently until light and fluffy.
- Spread evenly into cooled tart shells.
- Top each tart with strawberries, pineapple, kiwi, and mango in a colorful pattern.
- Sprinkle shredded coconut on top if desired.
- Heat apricot preserves with water until smooth.
- Brush lightly over fruit for shine and freshness.
- Add mint leaves for a fresh look.
- Serve immediately or refrigerate until ready.

- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- Feel free to use any seasonal fruits you prefer.
