Ingredients

  • ½ cup powdered sugar

  • ½ cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream, whipped to soft peaks
  • 1 cup strawberries, halved
  • 1 cup fresh pineapple chunks
  • 2 kiwis, peeled and sliced
  • ½ cup mango, diced
  • 2 tablespoons shredded coconut (optional)
  • Fresh mint leaves, for garnish
  • ¼ cup apricot preserves (or peach)
  • 1 tablespoon water

Instructions

  1. In a food processor, pulse together flour, powdered sugar, and salt.
  2. Add cold butter cubes and pulse until mixture looks crumbly.
  3. Add egg yolk and water gradually until dough just comes together.
  4. Form into a disc, wrap in plastic wrap, and chill for 30 minutes.
  5. Preheat oven to 350°F (175°C). Roll dough and press into mini tart pans.
  6. Poke bottoms with a fork, line with parchment, and fill with pie weights.
  7. Bake 12–15 minutes, remove weights, and bake another 5 minutes until golden. Let cool.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth.
  9. Fold in whipped cream gently until light and fluffy.
  10. Spread evenly into cooled tart shells.
  11. Top each tart with strawberries, pineapple, kiwi, and mango in a colorful pattern.
  12. Sprinkle shredded coconut on top if desired.
  13. Heat apricot preserves with water until smooth.
  14. Brush lightly over fruit for shine and freshness.
  15. Add mint leaves for a fresh look.
  16. Serve immediately or refrigerate until ready.
