Ingredients
Scale
- 1 (9×13-inch) yellow cake, baked and cooled (or use a sponge cake layer)
- 1 ½ cups graham cracker crumbs (optional, for a crunch layer at the bottom)
- 4 tablespoons melted butter (if using crumbs)
- 2 cups heavy whipping cream, cold
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (8 oz) cream cheese, softened (optional for richer cream)

- 1 jar (10 oz) maraschino cherries, drained and patted dry
- Whipped cream swirls (for garnish)
- Extra pineapple chunks (for garnish)
- Whole maraschino cherries (for garnish)
Instructions
- If using graham crumbs: Mix crumbs with melted butter and press firmly into the bottom of a 9×13 dish. Chill for 10 minutes.
- If using cake: Layer the baked and cooled cake at the bottom of your dish.
- In a large bowl, whip the heavy cream, powdered sugar, and vanilla until medium peaks form.
- If using cream cheese: Beat until smooth, then fold into the whipped cream for a richer texture.
- Spread a layer of cream mixture over the base.
- Add a layer of cherries and pineapple.
- Repeat with another cream layer, then fruit.
- Pipe whipped cream swirls on top.
- Arrange pineapple chunks and cherries decoratively on top, pressing slightly into the cream.
- Refrigerate for at least 2 hours before serving, to allow flavors to meld and cake to firm up.
Notes
- For a crunchier texture, use graham cracker crumbs.
- Ensure the cream cheese is softened for easy mixing.
