- 2 cups fresh pineapple chunks
- 2 kiwis, peeled and sliced
- 1 cup fresh strawberries, halved
- ½ cup shredded coconut, lightly toasted
- Fresh mint leaves, for garnish
- 2 tbsp honey (for the drizzle)
- 1 tbsp fresh lime juice (for the drizzle)
- ½ tsp lime zest (for the drizzle)
Instructions
- Wash and prepare the pineapple, strawberries, and kiwis.
- Cut into bite-sized pieces and place in a large serving bowl.
- Heat a dry skillet over medium heat.
- Add the shredded coconut and stir until golden brown, about 2–3 minutes.
- Remove from heat and let cool.
- In a small bowl, whisk together honey, lime juice, and lime zest until smooth.
- Pour the honey-lime drizzle over the fruit and gently toss to coat.
- Sprinkle toasted coconut over the top.
- Garnish with fresh mint leaves.
- Enjoy immediately for best flavor, or chill for 15 minutes before serving for extra freshness.

- For a vegan option, substitute honey with agave syrup.
