Ingredients

  • 2 cups sweetened coconut cream (or heavy cream + 2 tbsp coconut extract)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 package (3.4 oz / 96 g) instant pistachio pudding mix
  • 1 ½ cups cold milk
  • 1 cup whipped cream (folded in)
  • Whipped cream, piped on top
  • ½ cup chopped pistachios

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a 9×13-inch pan. Chill in the fridge while preparing layers.
  2. Heat milk in a saucepan until warm. In a bowl, whisk sugar, cornstarch, and egg yolks. Slowly pour warm milk into egg mixture, whisking constantly. Return to saucepan, cook over medium heat until thick. Stir in vanilla and citrus zest. Cool slightly, then spread over crust. Refrigerate 30 minutes.
  3. Whip coconut cream with powdered sugar and vanilla until fluffy. Spread evenly over chilled custard layer.
  4. Prepare pistachio pudding with cold milk. Fold in whipped cream for light mousse texture. Spread over coconut cream layer.
  5. Pipe whipped cream on top. Sprinkle generously with chopped pistachios. Chill at least 4 hours (or overnight) before slicing.
