Description
A delicious and indulgent Truffle Mac & Cheese Waffle Sandwich that combines creamy mac & cheese with crispy waffles for a unique twist on a classic dish.

- 2 cups elbow macaroni (or any short pasta)
- 2 Tbsp butter
- 2 Tbsp flour
- 2 cups whole milk
- 1 cup heavy cream
- 1½ cups sharp cheddar cheese, shredded
- ½ cup mozzarella, shredded
- ¼ cup Parmesan, grated
- 1½ tsp truffle oil (or more to taste)
- Salt and pepper, to taste
- 1 large egg
- ¼ cup breadcrumbs (panko preferred, for crunch)
- ¼ cup Parmesan
- Butter or oil spray, for greasing the waffle iron
- Extra truffle oil drizzle (optional)
- Fresh parsley, chopped (optional)
- Creamy garlic dipping sauce or ranch on the side (optional)
Instructions
- Boil macaroni in salted water according to package directions until al dente. Drain and set aside.
- In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute to form a roux. Slowly whisk in milk and cream, cooking until thickened (about 4–5 minutes). Remove from heat and stir in cheddar, mozzarella, Parmesan, and truffle oil until melted and smooth. Season with salt and pepper to taste.
- Mix the cooked macaroni into the truffle cheese sauce until well-coated. Let cool for 10–15 minutes, then refrigerate for 30 minutes — this helps it firm up for pressing in the waffle iron.
- Stir in the egg, breadcrumbs, and extra Parmesan into the chilled mac & cheese. Mix until it holds together (like a thick batter).
- Preheat your waffle maker and grease it lightly with butter or oil spray. Spoon a generous amount of the mac & cheese mixture into the waffle maker and press firmly. Cook for 4–6 minutes, or until golden brown and crispy. Repeat with the remaining mixture.
- Take two mac & cheese waffles. Add a layer of extra cheese or even a drizzle of truffle aioli between them if desired. Sandwich them together and serve hot.
Notes
- For a more intense truffle flavor, adjust the amount of truffle oil to your preference.
- Make sure to let the mac & cheese mixture chill properly to ensure it holds together when cooking in the waffle maker.
- Serve with a side of creamy garlic dipping sauce or ranch for added flavor.
