- 1 ½ cups crushed vanilla wafers or graham crackers
- ¼ cup granulated sugar
- ½ cup melted butter
- 1 (8 oz) package cream cheese, softened
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup mixed berries (blueberries, raspberries, strawberries, chopped)
- Food coloring: pink, purple, turquoise (gel recommended)
- 1 cup whipped cream (homemade or store-bought)
- Rainbow sprinkles and colorful candy pearls
- Fresh berries for garnish
Instructions
- In a bowl, mix crushed cookies, sugar, and melted butter until evenly combined. Press mixture firmly into the bottom of a 9-inch pie pan. Chill in the freezer for 10–15 minutes while preparing the filling.
- In a large bowl, beat cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and mix until incorporated. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Divide the filling into 3 small bowls. Tint each bowl with a few drops of food coloring: one pink, one purple, one turquoise. Fold a few fresh berries into each color bowl. Drop spoonfuls of each color randomly into the chilled crust. Swirl gently with a knife for a marble effect (don’t overmix).
- Smooth the top and refrigerate for at least 4 hours or until set. Once firm, top with swirls of whipped cream, rainbow sprinkles, and berries. Optional: add a drizzle of white chocolate or edible glitter for extra magic.
