Ingredients

  • 4 cups mixed berries (fresh or frozen — blackberries, raspberries, strawberries, blueberries)
  • ½ cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 tsp vanilla extract
  • Vanilla ice cream or whipped cream (for serving)

Instructions

  1. Preheat oven to 180°C / 350°F. In a bowl, mix berries with sugar, brown sugar, cornstarch, lemon juice, vanilla, and salt. Stir gently until berries are coated and glossy. Pour into an 8×8 (20 cm) baking dish or similar.
  2. In another bowl, combine flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla. Mix just until smooth — batter will be thick.
  3. Spoon dollops of cobbler batter evenly over the berries. It does not need to fully cover them — the topping spreads beautifully as it bakes.
  4. Bake for 40–45 minutes until the topping is golden brown and the berries are bubbling around the edges. Let it cool for 10 minutes — it thickens as it rests.
  5. Serve generous scoops with a big spoonful of vanilla ice cream — let it melt into the warm berry juices just like in the photo!

Notes

  • For best results, use a mix of fresh berries.
  • Adjust sugar based on the sweetness of the berries used.
