Ingredients

  • 1 cup (200 g) white chocolate chips (or chopped white chocolate)
  • ¼ cup (60 ml) heavy cream
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon (plus extra for garnish)
  • Powdered sugar (for rolling, optional but recommended)

Instructions

  1. In a small saucepan, heat the heavy cream until just simmering (don’t boil).
  2. Pour the hot cream over the white chocolate in a heatproof bowl.
  3. Let sit for 1–2 minutes, then stir until smooth and melted.
  4. Mix in the lemon juice and zest until fully combined.
  5. Cover the bowl and refrigerate for 2–3 hours, or until firm enough to scoop.
  6. Using a small cookie scoop or spoon, roll the mixture into bite-sized balls.
  7. Roll each truffle in powdered sugar for that snowy finish.
  8. Garnish with extra zest on top.
  9. Store in the fridge in an airtight container for up to 1 week.
