- 1 cup (200 g) white chocolate chips (or chopped white chocolate)
- ¼ cup (60 ml) heavy cream
- 2 tbsp fresh lemon juice
- Zest of 1 lemon (plus extra for garnish)
- Powdered sugar (for rolling, optional but recommended)
Instructions
- In a small saucepan, heat the heavy cream until just simmering (don’t boil).
- Pour the hot cream over the white chocolate in a heatproof bowl.
- Let sit for 1–2 minutes, then stir until smooth and melted.
- Mix in the lemon juice and zest until fully combined.
- Cover the bowl and refrigerate for 2–3 hours, or until firm enough to scoop.
- Using a small cookie scoop or spoon, roll the mixture into bite-sized balls.
- Roll each truffle in powdered sugar for that snowy finish.
- Garnish with extra zest on top.
- Store in the fridge in an airtight container for up to 1 week.

- For a stronger lemon flavor, add more lemon zest.
