Ingredients

  • 1 large grapefruit, segmented
  • 1 ripe avocado, diced

Instructions

  1. Rinse the kale under cold water, remove tough stems, and chop into bite-sized pieces. Massage the leaves with a little olive oil to soften.
  2. Segment the orange and grapefruit by peeling them and slicing between the membranes to release juicy sections.
  3. Dice the avocado into cubes.
  4. Thinly slice the red onion.
  5. In a small bowl, whisk together olive oil and balsamic vinegar until emulsified.
  6. In a large bowl, combine kale, citrus segments, avocado, and onion. Drizzle with dressing and toss gently to coat.
