Ingredients

- 4 cups fresh kale, chopped
- 1 large orange, segmented
- 1 large grapefruit, segmented
- 1 ripe avocado, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Rinse the kale under cold water, remove tough stems, and chop into bite-sized pieces. Massage the leaves with a little olive oil to soften.
- Segment the orange and grapefruit by peeling them and slicing between the membranes to release juicy sections.
- Dice the avocado into cubes.
- Thinly slice the red onion.
- In a small bowl, whisk together olive oil and balsamic vinegar until emulsified.
- In a large bowl, combine kale, citrus segments, avocado, and onion. Drizzle with dressing and toss gently to coat.
Notes
- This salad is best enjoyed fresh but can be stored in the refrigerator for up to a day, though the kale may wilt.
