- 200 g (2 cups) digestive biscuits or graham crackers, finely crushed
- 100 g (7 tbsp) unsalted butter, melted
- 2 tbsp sugar
- 250 g (8 oz) cream cheese, softened
- 250 ml (1 cup) heavy cream, chilled
- 100 g (½ cup) granulated sugar
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 3 large egg yolks
- 100 g (½ cup) sugar
- 60 ml (¼ cup) fresh lemon juice
- 1 tbsp lemon zest
- 60 g (4 tbsp) unsalted butter, cubed
- Thin lemon slices for garnish
Instructions
- Mix the crushed biscuits, sugar, and melted butter until combined. Press firmly into the base and sides of a tart pan. Chill in the fridge for 20 minutes (or bake at 175°C / 350°F for 10 minutes for a crispier crust).
- Beat the cream cheese with sugar until smooth. Add vanilla, lemon juice, and zest. Mix well. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Spread evenly over the cooled crust. Chill for at least 2 hours.
- In a saucepan, whisk together egg yolks, sugar, lemon juice, and zest. Cook on low heat, stirring constantly, until thickened (about 5–7 minutes). Remove from heat and whisk in butter until glossy. Let it cool slightly, then spread over the cream filling.
- Arrange thin lemon slices on top in a sunburst pattern. Chill for 1 hour before slicing. Serve cold and enjoy the refreshing lemony bite!
