This dish features crispy tofu tossed with flavorful coconut beans and spices.
Ingredients

- 14 oz tofu, drained and pressed
- 1 tablespoon cornstarch
- 3 tablespoons olive oil, divided
- 1 (15 oz) cannellini or butter beans, drained and rinsed
- 7 oz coconut milk
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 teaspoons garam masala, divided
- 1 teaspoon smoked paprika
- 2 tablespoons tomato paste
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cut the tofu into cubes and toss with cornstarch, 1 teaspoon garam masala, salt, and pepper.
- Heat part of the olive oil in a pan and cook the tofu until golden and crispy, then set aside.
- In the same pan, cook the onion until soft, then add garlic, remaining garam masala, and smoked paprika. Stir briefly until fragrant.
- Add the tomato paste and cook for a minute to deepen the flavor.
- Pour in the coconut milk and stir into a smooth sauce.
- Add the beans and return the tofu to the pan. Let everything simmer until heated through and slightly thickened.
- Finish with fresh cilantro and adjust seasoning before serving.
