Description

This dish features crispy tofu tossed with flavorful coconut beans and spices.


Ingredients

  • 14 oz tofu, drained and pressed
  • 1 tablespoon cornstarch
  • 3 tablespoons olive oil, divided
  • 1 (15 oz) cannellini or butter beans, drained and rinsed
  • 7 oz coconut milk
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 teaspoons garam masala, divided
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Cut the tofu into cubes and toss with cornstarch, 1 teaspoon garam masala, salt, and pepper.
  2. Heat part of the olive oil in a pan and cook the tofu until golden and crispy, then set aside.
  3. In the same pan, cook the onion until soft, then add garlic, remaining garam masala, and smoked paprika. Stir briefly until fragrant.
  4. Add the tomato paste and cook for a minute to deepen the flavor.
  5. Pour in the coconut milk and stir into a smooth sauce.
  6. Add the beans and return the tofu to the pan. Let everything simmer until heated through and slightly thickened.
  7. Finish with fresh cilantro and adjust seasoning before serving.
